Toasted Coconut Pineapple Bars

Yes this is the recipe we promised following our field trip to King Arthur Flour :-) But first a bit about it; we used some awesome Pineapple Juice Powder  (and honestly we did not expect it to be so tasty) . Second, we toasted the coconut first (you don’t think it matters but oh yeah, it does) and finally, we decided to chop up and add some dried pineapple to enhance that whole pineapple experience. And here’s the thing, we don’t even like pineapple-coconut thingy bars and these we absolutely did love these! So if you’re like us, you might just want to try them not only because you might be surprised but also because come on all ready (!) they are SO summer, SO Hawaiian, SO tropical that it just makes you feel like summer is actually on its way…..or maybe just wear the mu-mu – that totally works too.

 

Ingredients

  • 1/2 cup of butter, melted
  • 1 cup  packed dark brown sugar
  • 1 egg, lightly beaten
  • 1 teaspoon of vanilla
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon of baking soda
  • 1 1/2 tablespoons pineapple Juice Powder (the secret ingredient)
  • Pinch of salt
  • 1 cup of all-purpose flour
  • 3/4 cup chopped dried pineapple (reserve 1/4 for sprinkling on top before baking)
  • 3/4 cup toasted coconut (reserve 1/4 for sprinkling on top before baking)

Method

1 Preheat the oven to 350°F. Lightly butter and flour an 8X8 pan. Stir together the melted butter and sugar in a bowl.

2 Add the egg and vanilla extract, mix well.

3 Add the flour, baking soda, baking powder, pineapple juice powder, and salt, mix it all together. Stir in chopped dried pineapple and toasted coconut

4 Pour into the pan and spread evenly. Sprinkle remaining 1/4 cup pineapple and coconut on top. Bake for 20-25 or until done. Allow to cool. Or don’t and totally eat them warm cause that’s what we did and we are NOT sorry.

And.....they're ready!! Or if you are like us they were ready hot out of the oven when they are too hot to cut so you just scoop some out. Yes, we did.
