The Fun Birthday Cake

FullSizeRender-6 I mean, come on, how can you not look at this cake and not think "fun?!" It just is. This is a one bowl cake. Awesome. We guarantee you will be surprised, no wait (!) shocked, at how much you love the way this taste. It has become one of our favorite "go to cakes" just because of the taste and because of the ease of it. And the frosting? Fluffy Peanut Butter? No way. This frosting can stand on its own, it's that good. And in fact, we sometimes use it to make a sort of soft truffle either rolled in dark chocolate or as seen here, rolled in sprinkles. It's a FUN cake 🙂 Come on.

One Bowl Cake

 

Ingredients

  2 1/2 cups sugar 3 cups whole wheat flour (or all-purpose) 1/2 cup cake flour 1 cup unsweetened cocoa powder 2 1/2 teaspoon baking powder 2 1/2 teaspoon baking soda 1 teaspoon salt 3 eggs 1 1/2 cup milk (any milk - almond, soy, etc.) 3/4 cup vegetable oil 3 teaspoons vanilla extract 1 cup boiling water 1/2 cup brewed coffee  

Directions

  Preheat oven to 35o degree F. Cut rounds of parchment paper for 3 nine-inch round pans. Grease pans, place parchment and then grease parchment. Baking spray works great here. In a large bowl, stir together the flour, cocoa, baking powder, baking soda and slat. Add the sugar, eggs, milk, oil and vanilla. mix for a couple of minute until smooth either on medium with your mixer or by hand. Stir in the coffer and then the boiling water (last). Pour into the prepared pans. This batter tends to by thin so don't panic. Bake 30 to 40 minutes in the preheated oven, until the cake tests done with a cake tester or toothpick. Cool in the pans for at least 15 minutes, then remove to a wire rack to cool completely.   *** You can make this cake vegan by using an alternative milk substitute and by eliminating the eggs and using a vegan egg substitute. Fluffy Peanut Butter Frosting

 

Ingredients

  1 cup butter, softened 2 cups creamy peanut butter 3 tablespoons milk, or as needed 4 cups powdered sugar  

Directions

  Put the butter and peanut butter into a medium bowl, beat with a mixer until mixed. Gradually mix in the sugar, and when it starts to get thick, incorporate milk one tablespoon at a time until all of the sugar is mixed in and the frosting is thick and spreadable. Beat for at least 3 minutes for it to get good and fluffy.   *** this can also be made vegan by substituting the butter for a vegan variety such as Earth Balance and by using almond, soy or your alternate vegan choice.
