Sticky Bun Doughnuts

OK – so some mornings don’t you just wake up and think – doughnut? I want a doughnut, NO WAIT (!) a sticky bun!! Well we do and now we’ve got you covered. Make these and you get both options. Out of your cupboard easy. That’s right, easy. So go ahead gather your ingredients, start brewing your coffee and get ready to settle down to one (or many) of these puppies……

 

Sticky Bun Doughnuts

Doughnuts:

 

2 tablespoons unsalted butter

2 tablespoons vegetable oil

1/4 cup granulated sugar

1 large egg

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 cup all-purpose flour

6 tablespoons milk (we used vanilla almond milk)

 

Topping:

 

2 tablespoon melted unsalted butter

1 tablespoon maple syrup, honey, or corn syrup

1 tablespoon granulated sugar

1 tablespoon brown sugar

1/4 cup diced pecans (or nut of choice)

3/4 teaspoon cinnamon

Beat together the butter, oil, and sugars until smooth.

Add the egg, beating to combine.

Stir in the baking powder, baking soda, and salt. Beginning and ending with flour, stir the flour into the utter mixture alternately with the milk.

 

Topping:

Combine the melted butter and syrup or honey; divide it among the wells of the prepared doughnut pan. Combine the sugars, nuts and cinnamon, and sprinkle atop the butter/syrup in each well. Spoon the batter evenly into each well, filling to the rim.

Bake the doughnuts for about 15 minutes, or until they’re raised and firm. Remove the pan from the oven, and place it on a rack. Loosen the edges of each doughnut and immediately turn the pan over onto a piece of parchment paper. Gently shake the pan to loosen the doughnuts, then lift it off. Something that we find helpful – with a sharp nice cut around the center circle to loosen and define the “doughnut shape.”

Place the doughnut on a rack to coll slightly. Serve warm. Makes about 6.
