Red Grape Muffins

We love these muffins!! They are easy to whip up, have a really nice texture, and are just sweet enough but not too sweet. The bonus of course are the grapes. They lend themselves to this muffin in the freshest, best way – they stay crunchy – and who doesn’t love that? This is a one bowl recipe and most likely you already have all the ingredients, except the grapes maybe, on hand. You can substitute the grapes if you want to but why would you? We promise not to judge you if you do but come on, this muffin really is all about the grapes :-)

Red Grape Muffins

 

Ingredients:

 

2 1/2 cups all-purpose flour

1 cup sugar + a bit extra for sprinkling on top after baking

2 1/2 teaspoons baking powder

1 cup milk

1 teaspoon vanilla

2 eggs, well beaten

1/2 cup butter, melted

1 1/2 cups red seedless grapes, cut in halves

Directions:

 

Preheat your oven to 375 degrees F. Line muffin tin with cupcake papers or lightly spray with non-stick spray. Yield – 12 muffins

Combine flour, sugar, and baking powder. Make a nice well in the center.

Add milk, beaten eggs, butter and vanilla.

Stir until ingredients are combined. Lightly fold in grapes.

Bake 25 minutes or until golden brown on top. Sprinkle with granulated sugar and let cool in muffin tins.
