Quinoa Brittle with Toasted Black Sesame Seeds

FullSizeRender-3 Well we do love quinoa, but "UH-OH", as Zoe and Pippa would say. They are 19 months old and they know, oh they know. We do think that this recipe has potential however. Our sugar was heated a bit too long so what we got was one really crunchy candy. Like REALLY break-your-teeth-if-you're-not- careful-crunchy. We'll make this again, cook the sugar less and add some nuts and maybe some golden sesame seeds as well as the black ones. Don't let our mess dissuade you from making this, make your own mess - maybe you'll like it. FullSizeRender-4  

Quinoa Brittle with Toasted Black Sesame Seeds



  2 1/2 cups cooked quinoa 2 Tbs. canola oil (or sunflower oil is a good choice too) 1 1/2 cups sugar 1/2 tsp. baking soda 2 Tbs. toasted sesame seeds FullSizeRender-2  


  Toss the cooked quinoa on a large baking sheet with 2 Tbs. canola oil. Bake at 350 degrees F. for 30 minutes, until crisp. In a saucepan, cook 1 1/2 cups sugar over moderately low heat, stirring occasionally, until amber. Watch it here, this is where we screwed up. Stir in 1/2 tsp. baking soda, then stir in the quinoa and 2 Tbs. toasted sesame seeds. Spread thinly on a baking sheet to cool. Makes about a 1 lb. FullSizeRender-5
