Peanut Butter and Jelly Bars

  photo 3 Did someone say "Peanut Butter and Jelly" bars?  Why yes they did. That was us and if you love PB&J you are going to love these bars!! Easy, fun, gooey and delicious, as any good PP&J should be. We used the seedless raspberry jam as noted in the recipe but any will do. I have a feeling there might be some classics out there. You know who you are - you grape jelly and strawberry jam people you  🙂  
                                           Peanut Butter and Jelly Bars
Ingredients: 2 1/4 cups all-purpose flour 1 cup sugar 1 cup (2 sticks) unsalted butter, at room temperature 1/2 teaspoon salt 1 egg, lightly beaten 1 teaspoon vanilla extract 1 jar (12 or 16 ounces) seedless raspberry jam 3/4 cup roasted salted peanuts, coarsely chopped 1/2 cup peanut butter chips Instructions: Preheat oven to 350 degrees F Brush a 9 x 9 pan with butter, then line with parchment paper allowing the paper to hang over 2 sides of the pan by an inch or two; butter parchment paper In a large bowl combine flour, sugar, and salt then use a pastry blender to mix in butter until mixture resembles coarse crumbs. Add egg and vanilla then stir until dough just comes together. Reserve 1 cup of dough for the topping and press the remaining dough into the bottom of the pan as evenly as possible. Spread the jam over the top of the layer of dough Combine the reserved dough with the peanuts and peanut butter chips; crumble over the jam layer Bake for 45 -50 minutes or until the topping is a golden brown Cool completely before cutting or or you'll have one falling apart mess on your hands. Run a knife around the edges then using the over hanging parchment paper , lift bars from the pan, and cut in 12 or 16 bars.   photo 2
