Peanut Butter and Honey Sandwich Cookies (GF)

Here is a nice new year gluten free cookie to pack in your kids lunches as they begin back to school. We used honey (cause we adore honey!) but any jam or jelly works and tastes just as great. We also make them a little bit bigger than bite size but obviously the size of your sandwich is a preference :-)

 

                                        Peanut Butter and Honey Sandwich Cookies

 

Cookie Ingredients:

1 cup peanut butter, smooth or chunky
1 cup sugar
1 egg
1 teaspoon vanilla extract

Middle:

more peanut butter
honey

Directions:

In a large bowl, cream peanut butter and sugar until light and fluffy, about 4 minutes. Beat in egg and vanilla. We have also hand mixed this, it’s not hard it just takes a bit more time. Sometimes it is the method of choice for us.

Shape into small balls (about a spoonful). Place 2 inches apart on a cookie sheet covered with parchment paper; flatten with a fork. Bake at 350 for about 10 minutes or until set. Cool for 5 minutes; remove to wire rack. Let cool completely.

Using the flat side of one cookie spread a little peanut butter on it and then some honey. Place another cookie, flat side down, to make a little sandwich. Wah lah!! A small peanut butter and honey cookie sandwich!!!
