Mother’s Day Almond Raspberry Financiers

First…..Happy Mother’s Day to everyone out there. Hopefully it is a wonderfully sunny relaxing day. Now how about making something for that special mom of yours that is easy, fancy and just lovely? This is it. Make these for your mom or for that special “mom” in your life. They are sure to love them and they are quick to make to boot! So what exactly is a “financier” – No, not someone who deals with finances. Good guess though. This kind of financier is a small French almond cake, usually baked in molds. They are light and moist with a crisp, eggshell-like exterior. Ours have fresh berries and sliced almonds on top and are dusted with powdered sugar. Add a dollop of fresh whipped cream and you have a delightful Mother’s Day treat. Yum.

Mother’s Day Almond Raspberry Financiers

 

Ingredients:

 

3/4 cup (1 1/2 sticks) unsalted butter

1 cup almond meal/flour

1 2/3 cups powdered sugar, plus a bit more for sprinkling

1/2 cup all-purpose flour

pinch of salt

6 large egg whites

1 teaspoon vanilla

21 raspberries (3 for each financier) and some extra for eating :-)

sliced almonds for topping

Directions:

 

Preheat oven to 400 degrees F. Spray the inside of tartlet mold with non-stick cooking spray. Set aside.

Melt the butter in a small saucepan over medium heat. When the butter begins to give off a nutty aroma remove froth the heat. Yo are browning the butter and this happens fast after it reaches the browning stage (about 3 to 4 minutes). Take it off heat once it begins, it will continue to brown once removed. Set aside.

In a large bowl whisk together almond meal, powdered sugar, flour and salt. Set aside.

Lightly beat egg whites. Make a well in the center of the dry mixture and add the egg whites and the vanilla and whisk until fully combined. Slowly stir in the browned butter and whisk slowly to incorporate.

Pour the batter into each tartlet mold about 2/3 full. Bake for 7 minutes then open oven door and add 2 or 3 raspberries per cake and a sprinkle of sliced almonds, close oven door and continue to bake for an additional 7 to 10 minutes or until financiers are lightly browned at the edges and spring back in the middle. Let cool in the tartlet pan for 5 minutes before removing and placing on a wire rack to fully cool. Repeat with remaining batter.

Sprinkle with powdered sugar before serving and serve with additional berries if desired. Of course it is, do it. And why don’t you add just a smidgen of whipped cream too. So so so good. Happy Mom’s Day !!!
