Molly’s Blueberry Polenta Upside-Down Cake

FullSizeRender-10 Yep, Molly is at it again! She's in the kitchen making a great fresh blueberry cake with her baby brother Pete trying to help out. This cake is easy to make - it's fresh, light, and wonderful with a dab of fresh whipped cream. Another nice twist to this cake is the use of polenta, which gives it a really lovely texture. You gotta make this one....A really nice summer cake and let's face it....how good would this be sitting outside on a warm summer evening along with a GIANT glass of sangria? Totally. Molly's Blueberry Polenta Upside-Down Cake



  1 1/2 cups sugar, divided 1/4 cup light brown sugar 3 cups blueberries plus more for just plain eating while making this cake 2 large eggs Finely grated zest of 1 large orange 2/3 cup orange juice 2/3 cup olive oil (not extra virgin) or any oil really - sunflower, canola, vegetable, etc. 1 teaspoon vanilla extract 1/2 cup regular or instant polenta 1 1/4 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt  


  Heat oven to 35o degrees F. Grease and line base and sides of a 9-inch-square cake pan with baking parchment, and grease the parchment. Mix 1/3 cup sugar and 1/4 brown sugar together and then sprinkle over base of pan, and cover evenly with blueberries. FullSizeRender-4 In a large mixing bowl, combine eggs, 1 cup sugar and orange zest. Whisk until pale and thick. Add orange juice, oil and vanilla and whisk until blended. In a separate bowl, whisk together polenta, flour, baking powder and salt. Add flour mixture to egg mixture, whisking until smooth. pour into prepared pan. IMG_6014 IMG_6015 IMG_6016 Bake for about 45 to 55 minutes, until golden brown and springy to the touch, and a toothpick inserted near the center comes out clean. Cool cake on a rack for about 5 minutes. Carefully invert cake onto a serving plate, and slowly peel off parchment paper. Serve warm or at room temp with or without whipped cream or how about upping your game with vanilla ice cream. Oh yeah. FullSizeRender-7
