Meyer Lemon Cookies

So the crazy thing is that it’s the middle of winter and yet I happen to have a potted Meyer Lemon Tree that because of the cold I brought into my sun room and low and behold (!) it is putting out lemons like nothing is stopping it!! I guess it is really appreciating the nice warm sunroom and so is showing that appreciation by SO MANY lemons!! Luckily we love these lovely tasting lemons….Here are some very simple cookies to help you get through the cold weather. Maybe it will make you feel like it’s warm out there. Or maybe not. Either way, do some baking, and then make yourself a nice hot cup of tea and enjoy!!

Meyer Lemon Cookies

 

Ingredients

 

1 1/2 cups flour

1 1/2 teaspoon baking powder

1 teaspoon cornstarch

1/2 teaspoon salt

1 cup granulated sugar

1 tablespoon Meyer lemon zest (about 2 lemons)

1/2 cup unsalted butter, softened

1 large egg

1 tablespoon Meyer lemon juice

1/2 teaspoon vanilla extract

 

Powdered sugar for rolling (about 1/3 cup)

Directions

 

Whisk together flour, baking powder, cornstarch, and salt in a medium bowl. Place sugar and Meyer lemon zest in a food processor and pulse for one minute. OR….mix together in you mixer. Works just as well – Beat butter and Meyer lemon-sugar in a large mixer bowl at medium speed until creamy; beat in egg, lemon juice, and vanilla until combined. Reduce speed to low and gradually add flour mixture; beat just until incorporated. Cover dough and chill in the fridge for at least 4 hour or overnight.

preheat oven to 35o degrees F – If your dough has chilled overnight, let stand at room temp for 20 minutes before baking – Line baking sheets with parchment paper. Place powdered sugar in a shallow bowl. Scoop 1 1/2 -inch balls of dough and roll in powdered sugar to coat; place two inches apart on prepared baking sheets.

Bake for 10 to 11 minutes, until edges are set and tops are matte (not shiny). Cool for 3 minutes on baking sheets, then transfer to a wire rack to cool completely. Store in an airtight container at room temperature.

**Can dusted again while still warm with Meyer lemon infused powdered sugar = powdered sugar with Meyer lemon zest added !! Adds a bit of an added hit of the lemon :-)
