FullSizeRender

So what’s the deal with these cookies? Well, we’ll tell you…..even though they might appear as your every day run of the mill shortbread recipe, and they kinda are, the fresh lime for tartness and dried cherries also for tartness and texture, really turn these into something a bit special. A nice summer cookie for sure. The other bonus in making these cookies is that you can double the recipe and freeze a couple of rolls for later. It’s nice to be able to pull cookies ready to bake out of the freezer when you need them or….just want them. Next time we might throw in some coarsely chopped white chocolate chips as well. That just sounds good.
