Lime Shortbread with Dried Cherries

Well, we'll tell you.....even though they might appear as your every day run of the mill shortbread recipe, and they kinda are, the fresh lime for tartness and dried cherries also for tartness and texture, really turn these into something a bit special. A nice summer cookie for sure. The other bonus in making these cookies is that you can double the recipe and freeze a couple of rolls for later. It's nice to be able to pull cookies ready to bake out of the freezer when you need them or....just want them. Next time we might throw in some coarsely chopped white chocolate chips as well. Lime Shortbread with Dried Cherries



  1 cup butter, softened 3/4 cup powdered sugar 1 tablespoon lime zest 2 teaspoon vanilla 1/2 teaspoon almond extract 2 cups flour 1/2 teaspoon baking powder 1/8 teaspoon salt 1/2 cup chopped dried cherries plus a few for sprinkling on top FullSizeRender-4 FullSizeRender-3


  Cream the butter with the powdered sugar until blended. Beat in lime zest and extracts. In another bowl, mix flour, baking powder and salt; gradually beat into creamed mixture. Add cherries Divide dough in half; shape into a 7-inch long roll. wrap in plastic wrap; refrigerate 3 to 4 hours. Preheat oven to 35o degrees F. Unwrap and cut dough into 1/4 inch slices. Place 2 inches apart on ungreased baking sheet lined with parchment paper. Bake 9 to 11 minutes. Cool and then frost if desired. To make a simple icing mix 3/4 cup powdered sugar, juice of one lime, 1/2 teaspoon of vanilla and enough milk (or water) to make a smooth icing. If you like it more lime/tart like add more fresh lime juice and less milk to get to your desired consistency. Obviously. FullSizeRender-7
