Faux Lara Bars

 

My husband really likes Larabars. In fact, he loves them. His favorite kind is the Peanut Butter and Jelly Bar (find them here). They were always something I wanted to try to make, so I finally did! There are only 4 ingredients in the bar, so I figured it would really be a problem of ratios of ingredients. I found a few recipes online, but I ultimately decided to try my own out (I did, however, use them method found here).

 

Faux Peanut Butter and Jelly Lara Bars

 

Ingredients

  • 1/2 cup (about 80 grams) unsweetened dried cherries
  • 80 grams dates (really, you just want this to be the same amount as the cherries)
  • 3/4 cup peanuts (unsalted – if you use salted, omit the salt)
  • 1 teaspoon salt

 

Instructions

  1. Put cherries, dates, and salt into food processor. Process until it becomes paste-like.
  2. Remove paste from food processor. Place in separate bowl.
  3. Grind peanuts in food processor until the peanuts are little pieces. (Don’t grind too much – you don’t want peanut butter!)
  4. Transfer the peanuts to the bowl with the cherry-date paste. At this point, you can either try to stir it all together with a spoon, or use your hands to mix it all together (that’s what I did!)
  5. Once everything is incorporated, you can make little energy balls, larger bars, or smaller bars. I made what look like mini-bars. Very cute!

 

NOTE: when I made them, I used 1 cup peanuts – this was too many! The result wasn’t bad, but it was definitely peanut-heavy.  I suggest 3/4 cup, but feel free to experiment!
