Labor Day Last Minute Double Chocolate-Cherry Brownies

So now it’s Labor Day, already. The end of summer and the celebration of all you hard workers out there. We know you’ve already made your 40 minute hamburger buns and now you want something chocolate and sweet and portable to take to your picnic. This is it. Chocolatey and chewy and just plain good. Add a glob of vanilla ice cream on top and you’ve got yourself just a little bit heaven. Stay cool. Have fun. Eat chocolate. Done.

 

Labor Day Last Minute Double Chocolate-Cherry Brownies

Ingredients

 

3/4 cup unsalted butter (1 1/2 sticks)

6 ounces unsweetened chocolate, chopped

2 1/2 cups sugar

4 eggs

1 egg yolk

1 1/2 teaspoons vanilla extract

1/2 teaspoon almond extract

1 cup plus 2 tablespoons all purpose flour

1/4 cup cocoa powder

1 teaspoon ground cinnamon

1 cup halved dried cherries (or you can use chopped pitted prunes)

1 cup semisweet chocolate chips

 

Directions

 

Preheat oven to 350 degrees F. Spray and flour a 13×8 1/2-inch glass baking dish. Melt butter and unsweetened chocolate in heavy large saucepan over low heat. Mix in sugar. Mix in eggs 1 at a time, then yolk. Add extracts, then flour and cocoa powder and cinnamon and stir until just blended. Mix in cherries and chocolate chips.

 

Spread the batter in prepared pan. Bake until brownies are firm around edges and tester inserted into center comes out with a few crumbs, about 35 minutes. Cool on a rack. Cut into 16 or 32 pieces.
