July 4th Whoopie Pies

It’s summer!! It’s hot, you’re drinking sangria, you’re watching baseball and you’re getting ready to celebrate the 4th of July. We know your are. And…..you’re going to a BBQ and you are committed to bring desert. Well, we’ve got it for you. These are fun and super easy to make and…..patriotic to boot!! You can’t go wrong with whoopie pies. Even the name is funny so come on, get started and have a happy 4th of July!!!

Cakes

  • 1 cup sugar
  • 2/3 cup (11 tablespoons) butter
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 large eggs
  • 3 cups
  • 2/3 cup milk

Filling

  • 4 tablespoons soft butter
  • 2 cups glazing sugar or confectioners’ sugar, sifted
  • 1 teaspoon vanilla
  • 8 ounces cream cheese, softened
Everything is dumped together and mixed well. This is a very thick, stiff batter. Do not be afraid.

Divide the batter into two bowls and add food coloring. This is where you want to make sure you use gel food coloring. If you don't, expect a much watered down color.

Ready to bake! I used a cookie pan dropping by tablespoons onto a parchment lined baking sheet will work just as well. Wet your hands, pat and shape....

So now they have baked and cooled and you've made the filling. This is where you pipe in the filling and we actually added a few mini-chocolate chips in the middle before we put the top on. We always need chocolate. Sneaky, uh!
