July 4th Double Chocolate Peanut Butter Filled Doughnuts with Marshmallow Icing

Sure we say that more times than not with recipes we post here (and we always mean it - well, mostly) but this time.....oh man, these are just too good. You will eat more than you want to and then feel sick and it will be totally worth it. So go get your doughnut pan and make them. Make a double batch. July 4th Double Chocolate Peanut Butter Filled Doughnuts with Marshmallow Icing



  1 cup all-purpose flour 1/4 cup unsweetened cocoa powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 cup light brown sugar, packed 1/2 cup plain yogurt (vanilla would be good too) 2 large eggs + 2 tablespoons water 4 tablespoons unsalted butter, melted 1 teaspoon pure vanilla extract 1/2 cup mini chocolate chips (or more!) Peanut butter (about 1/4 to 1/2 cup)   FullSizeRender-8  


  Preheat oven to 325 degrees F. Spray your doughnut pan with non-stick spray and set aside. In a medium bowl whisk together, flour, cocoa, baking soda, salt, brown sugar and mini chocolate chips. In a small bowl whisk together yogurt,  eggs mixed with the 2 tablespoons water, melted unsalted butter and vanilla extract until all-together mixed. Pour the wet ingredients into the dry ingredients and fold together until well mixed. Make sure to get everything off the bottom, leaving no flour behind! Using a small spoon to put batter into prepared doughnut pan, just the bottom. Using a different small spoon, put dollops of peanut butter all around your little doughnut in the pan. Cover with more batter. Good job. They should be about 2/3 full. Bake 11 to 13 minutes. Remove from oven. Cool at least 5 minutes before removing from pan. Marshmallow Icing:

  1 1/2 cups powdered sugar 1 teaspoon vanilla exract 1/8 teaspoon salt 3 tablespoons unsalted butter 2 cups mini-marshmallows Jimmies   Directions:   In a medium bowl, mix powdered sugar and salt. Melt butter with 1/4 cup water in pan on your stove. Stir in vanilla. Add marshmallows and stir until melted. Whisk into sugar mixture until smooth.   Now put it all together - icing your doughnuts and shake those jimmies on top!!!   FullSizeRender-2 FullSizeRender-9
