Jen’s Vegan Chocolate Chip Cookies

A very good friend of mine is moving today. The big u-haul is in her driveway. Sad, yes. Happy for her and her family, absolutely. I’m sad cause people like Jen don’t come around that often and I am very selfishly going to miss her. Oh we will see each again and yes, we will email and text and talk on the phone but come on…it’s just not the same, and that’s what’s sad.  Besides she was my go-to-vegan whom I always experimented on when adapting recipes! Jen is also my girl-who-loves-chocolate-as-much-as-me friend!! OK, so we’ll make it happen and I’ll visit and she’ll visit and I will become a proficient mailer of vegan goodies!! As I said, Jen loves chocolate so of course what would any chocolate lover want to eat when loading up a giant u-haul? Of course you want to be eating a classic chocolate chip cookie. Duh.

Jen’s Vegan Chocolate Chip Cookies

– Mix together the following egg replacement for 2 eggs and set aside:

Mix together 4 tablespoons flour, 4 tablespoons coffee (or any liquid of your choice), 1 tablespoon vegetable shortening and 1 teaspoon baking powder. This substitution works well for binding the rest of the ingredients together and adds minimal flavor.-

Cookie Dough:

2 sticks plus 1 tablespoon Earth Balance
1 cup granulated sugar
1 1/2 teaspoons pure vanilla extract
1 teaspoon molasses
1/2 cup packed light brown sugar
2 1/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 cup coarsely chopped roasted walnuts or pecans
1 cup dark vegan chocolate bar, chopped

Lovely Ingredients!

  • In the bowl of a stand mixer fitted with a paddle attachment, cream the Earth Balance on medium and granulated sugar until fluffy, about 5 minutes.
  • Add the vanilla and molasses, and beat until incorporated. Add the brown sugar.Cream for about 2 minutes. Add the egg replacement mixture and beat for 1 minute more.
  • In a medium bowl, whisk together flour, salt, and baking soda.
  • Add the flour mixture, all at once, to the butter mixture and beat on low speed until the flour is just incorporated. Add the nuts and chocolate. Mix.
  • Cover the bowl and put in the fridge for about 3o minutes. In the meantime, preheat your oven to 375 degrees F. Line 2 baking sheets with parchment paper. Roll tablespoons of dough into balls and space about 2 inches apart on the baking sheet.
  • Bake cookies for about 12 to 14 minutes until lightly browned on the outside, but still soft in the center.
  • Cookies will keep in an airtight container for up to 5 days.

*** Oh and hey, I have the non vegan version of this cookie using browned butter (one of my favorite ingredients, butter that is)  that I will post later….

    ultra yummers, sus! and everyone who was in and out of our house today loved these. I like that They satisfy the sweet and chocolate need, but they feel substantial and don’t give you that flighty over sugared feeling. so good. thank you sweetie pie.
