Honeycrisp Apple Pumpkin Scones with Maple Glaze

  IMG_3680-1 These are a seasonal favorite and we love them. We love honeycrisp apples so yeah, we love these. This is a good combo - pumpkin + honeycrisp + maple = so, so good. Add that maple glaze and this is definitely a winner. You can also skip the maple (if you prefer) and dust with powdered sugar or cinnamon and sugar. However, if you like that maple flavor then do what we did - we put the glaze on, let them cool a bit, and then put another layer of the glaze on.  Enjoy.  

Honeycrisp Apple Pumpkin Scones with Maple Glaze




3 cups all-purpose flour 1/2 cup (1 stick) cold butter 1 tsp baking powder 1/2 tsp baking soda 2 tsp pumpkin pie spice 1/4 tsp salt 1/3 cup brown sugar 1/3 cup plus 1 TB  milk 1 cup solid-packed pumpkin 1 Honeycrisp apple, chopped  


1/4 cup butter 1/4 cup brown sugar 1/4 cup half and half 2 TB real maple syrup  


Preheat oven to 375 degrees F. Combine all dry ingredients, including brown sugar. Cut the cold butter into pieces and mix into dry ingredients. Cut it with a pastry blender or with your hands until there are no pieces larger than a pea. Mix in the chopped apples. Mix in pumpkin and milk, until just combined. Turn it out onto a clean surface and knead until just smooth. Pat the dough into a square that is 3/4 inch thick. Cut the dough into a 9 inch square and then cut each square in half diagonally. Place your scones onto a parchment lined baking sheet and bake for about 18 minutes. While baking make your glaze - combine the glaze ingredients in a small sauce pan over medium heat. Bring it to a gentle boil and let it bubble for one minute, stirring occasionally. Remove from heat. When your scones are done baking, transfer them to a cooling rack that is over another baking sheet or use another piece of parchment paper to catch drips. Brush the glaze over the hot scones. Yum. These are excellent warm but also good at room temp.   IMG_3671
