Happy Holidays!

Merry Christmas and Happy Holidays everyone! We hope everyone is having a great morning, hopefully with snow!

On Christmas my husband’s family normally makes popovers, but we’re not with them this year, so I thought I’d make them this year. They are so easy! And delicious! So, if you’re still looking for something to make this morning (or any morning for that matter), here’s a great recipe!

 

Popovers

Adapted from King Arthur Flour

Ingredients

  • 4 eggs (room temperature – this is important!)
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1 1/2 cups milk (room temperature to luke warm, if you’re in a hurry, you can heat it up in the microwave for 30-45 seconds)
  • 1 1/2 cups flour
  • 3-4 tablespoons butter, melted (put in the microwave for about 30 seconds)

Instructions

  • Preheat oven to 450 degrees (do this early – it takes awhile!)
  • Whisk together eggs, salt, vanilla, almond extract, and milk
  • Add the flour and whisk until there are very few, if any, lumps (some are ok, don’t go crazy getting every tiny lump out!)
  • Add in the butter and mix until it’s combined
  • Fill a popover pan (or large muffin pan) with batter (about 2/3 full – you don’t want them to get too tall!)
  • Bake at 450 degrees for 20 minutes, then reduce the temperature to 350 degrees and bake for 10 minutes
  • Tip: don’t open the oven until you’re ready to take out the popovers for good! Turn on the oven light if you want to check on them
