Halloween (Vegan) Doughnuts

It's Halloween week and we have the perfect treat for you....Doughnuts!! That's right, doughnuts and not just one kind of doughnut but two! And they are both Vegan to boot! So come on, have some fun and make something impressive - because lets face it, home made doughnuts are always impressive!! Oh, and hey, Happy Halloween!!

                                                        Halloween Doughnuts Vegan Apple Cider Doughnuts 1 cup all purpose flour 1 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp cinnamon 1/8 tsp nutmeg 1/8 tsp allspice 1/2 salt 1/3 cup maple syrup 1/4 apple cider 1/4 cup apple sauce 1 tbsp canola oil 1 tsp vanilla extract Apple Cider Glaze 1 cup powdered sugar 2 tbsp apple cider Cinnamon Sugar Topping 1/2 cup granulated sugar 1 tbsp cinnamon 1/4 tsp nutmeg Directions: Preheat the oven to 350 degrees F. Generously grease with spray a doughnut pan and set aside. In a small bowl combine flour, baking powder, baking soda, spices, and salt. In a separate bowl whisk together maple syrup, apple cider, apple sauce, canola oil, and vanilla extract. Add wet ingredients to dry and mix until just combined. Spoon batter into the prepared doughnut pan, filling each mold about 3/4 full. Bake for about 10 minuted, until doughnuts spring back when gently pressed. Remove from oven and let cool in pan for a few minutes before transferring doughnuts onto a cooling rack to cool completely. To make the glaze, whisk together powdered sugar and apple cider in a small bowl. In a separate bowl, combine ingredients for cinnamon sugar topping. Once the doughnuts have cooled, dip the tops of each doughnut into the glaze. Immediately sprinkle with the cinnamon sugar. photo 1-1 Vegan Chocolate Doughnuts 3/4 cup all-purpose flour 1/3 cup granulated sugar 1/4 cup cocoa powder 1/2 tsp baking powder 1/4 tsp baking soda 1/4 tsp salt 1/2 cup apple sauce 1/4 cup + 2 tbsp soy or almond milk (we used vanilla almond milk) 3 tbsp canola oil 1/2 tsp vanilla extract Chocolate Ganache 1/4 cup soy or almond milk 4 ounces vegan chocolate chips Directions: Preheat the oven to 350 degrees F. Lightly spray a doughnut pan and set aside. In a medium bowl combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. In a separate bowl whisk together apple sauce, almond milk, oil, and vanilla. Add wet ingredients to the dry ingredients and stir until just combined. Spoon into doughnut pan and bake for 10 minutes until the doughnuts spring back when pressed. Remove from oven and let cool slightly before transferring onto a cooling rack to cool completely. To make the chocolate ganache place chocolate chips in a small bowl. Heat the almond or soy milk just before it begins to boil - here's how you tell > a thin layer of skin will form on the top of the milk when ready. Pour over chocolate chips. Cover for 5 minutes then stir together until chocolate has completely melted and ganache is well combined. Dip or spread each doughnut into the chocolate ganache. Let set up slightly (about 5 minutes) before dragging your icing through to create a spider web. To get that done, pipe to this circles of orange frosting (powdered sugar, orange food coloring and almond milk to right consistency) around the top of the doughnut and then using a toothpick drag and pull down.   photo 1-5 photo 3 photo 2 photo 2-1 photo 2-2
