Gluten Free Zucchini Fudge Brownies

The first day of summer is just a few days away (Yay!!) Lots of picnics and back yard BBQ’s. Brownies, everyone loves brownies so…..We call these “wet” brownies. Why? Because they are. You don’t get more  moist than these. But are they good? Oh yeah. And GF to boot!  If you can resist them while warm :-) throw them in the fridge after they have cooled completely because as you will see, the texture does benefit from being refrigerated for a bit . We say try both!! But you best make them first :-) Here you go…….

Gluten Free Zucchini Fudge Brownies

 

Ingredients:

 

1/4 cup coconut oil

1 cup dark chocolate, chopped roughly (or dark chocolate chips)

1/2 teaspoon vanilla extract

3/4 cup granulated sugar

pinch of sea salt

2 large eggs

1/2 medium zucchini, grated and with moisture squeezed out (a little over 1/4 cup)

2 tablespoons cocoa powder

3 tablespoon corn starch

1/2 cup chocolate chips (for topping)

Directions:

 

Preheat the oven to 350 degrees F. Line an 8 x 8 pan with parchment paper, with some overlay for easy removal. Grease it lightly and set aside.

In a microwave safe bowl or stovetop, combine your chopped chocolate with coconut oil and melt together – The mixture should be silky and smooth. Add your vanilla extract and mix lightly.

Transfer the mixture to a large mixing bowl and add your eggs, sea salt and sugar and mix until fully incorporated. Add the grated zucchini, cocoa powder and corn starch and whisk  very well, until the batter is no longer grainy and smooth. Top with chocolate chips. Transfer to lined baking pan.

Bake the brownies for 20-25 minutes, or until the center just comes out clean. DO NOT over bake! Remove from the oven and allow to cool in the pan completely. Once cooled, transfer to the fridge to chill for the best texture – that is if you can wait :-)

** Here is a tip – Do not over bake these! Brownies may not look done but once they are cooled they will firm up. These can be kept for up to 5 days in the fridge and are freezer friendly.
