Gateau au Yaourt (Yogurt Cake) with Watermelon and Mint

Gateau au Yaourt is the definition of an “anytime cake” so obviously this is a cake that is fantastic anytime :-) This cake is so easy to make too. No creaming butter and sugar, just hand mix and you’re done. It also happens to be a wonderfully light summer cake with this delicious subtle vanilla flavor. It’s great plain or topped with any compote you like OR any fresh summer fruit you like. We made a simple watermelon fresh mint topping cause we love watermelon and right now they seem to be especially tasty. Enjoy!!

Gateau au Yaourt with Watermelon and Mint

 

Ingredients:

Cake –

 

1 cup whole milk plain yogurt

2 large eggs

3/4 cup plus 1 scant tablespoon sugar

1 teaspoon vanilla extract

1/3 cup vegetable oil

2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1 pinch salt

 

Watermelon topping –

 

Cubed watermelon

3 tablespoons sugar

1 teaspoon vanilla

fresh mint

Directions:

Cake –

 

Heat your oven to 350 degrees F. and line a round 10-inch cake pan with parchment paper.

In a large bowl, combine the yogurt, eggs, sugar, vanilla, and oil.

In another bowl, whisk together the flour, baking powder, baking soda, and salt.

Fold the flour mixture into the yogurt mixture, mixing only until all traces of flour disappear. Be careful not to overwork the dough.

Pour the batter into the pan and bake for 30 to 35 minutes, until the top is golden and a tester comes out clean.

Let stand for 10 minutes, then transfer to a rack to cool completely.

 

Watermelon –

 

Cut watermelon into small cubes, place in small bowl. Sprinkle with sugar, add vanilla extract and place 4 to 5 sprigs of fresh mint into bowl. Gently stir well and place in your refrigerator for at least 1 hour. Serve on cooled cake.
