Garlic Cheddar Beer Bread

This is definitely BEER bread, very “beery” with a splash of cheese. It is a easy quick bread that goes great with a hearty summer soup or red beans and rice or since it’s summer….a really nice summer cocktail :-) As you would imagine, this bread is awesome toasted and drenched in more melted butter. Lots.

Garlic Cheddar Beer Bread

3 cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon garlic powder

2 tablespoons honey or agave nectar, slightly warmed. We didn’t have either so we used golden syrup – worked just as well!

1 bottle (12 ounces) beer

1 cup sharp cheddar cheese, shredded

3 tablespoons unsalted butter, melted

Preheat oven to 350 degrees F. Grease a bread pan.

In a medium bowl, whisk together the flour, sugar, baking powder, salt and garlic powder. Using a mixing spoon, stir the beer and honey (or whatever you use) into the dry ingredients until combined.

Stir in the shredded cheddar until just combined. Here is where you want to be cautious and not over mix the dough. It’s tricky cause it’s a thick batter. Transfer the dough to the pan, and spread it out with a spoon so that it’s roughly level.

Bake for about 40 minutes. Remove the pan and brush the melted butter on top of the bread. Return to the oven and bake another 5 to 10 minutes, until the top is nice and golden brown and a knife/cake tester/toothpick inserted in the middle comes out clean. Let it cool for about 5 minutes. This is best server warm (or toasted later!!)
