Fresh Lime Summer Berry Zucchini Bread



  3 cups all-purpose flour 1 tablespoon ground cinnamon plus 1 teaspoon 1 teaspoon salt 1 teaspoon baking soda 1/4 teaspoon baking powder 1/4 teaspoon ground nutmeg 2 cups sugar 1 cup butter, softened 3 eggs 1 tablespoon vanilla 1 tablespoon fresh lime juice 2 medium zucchini, shredded 1/4 cup almond milk (or milk of choice) 2 cups mixed berries 1 cup toasted walnuts  


  Heat oven to 350 degrees F. Grease only the bottom of 2 (8x4-inch) loaf pans; set aside. Toast walnuts. There are a few ways to do this, we prefer stove top. Heat slowly in pan shaking and stirring often. Combine flour, cinnamon, salt, baking soda, baking powder, lime zest, nutmeg and cinnamon in bowl; set aside. Combine sugar, butter, eggs and vanilla in another bowl. Beat at medium speed, scraping bowl often, until smooth. Add flour mixture; beat at low spreed until combined, add milk until well mixed. Mixture is thick!! Stir in zucchini, berries and toasted walnuts. Spread batter into prepared pans. Bake 55-65 minutes or until toothpick or cake tester comes out clean. Cool at least 15 minutes before removing form pans. Either frost/glaze when completely cool. Store in fridge.  

Lime Glaze:

Mix powdered sugar with fresh squeezed lime juice to desired consistency. Pretty simple indeed. We held back a few of the berries and then muddled and strained the juice to add to the glaze.     Making the summer zucchini bread there is a call for ground cinnamon two places one asks for 1T. And the other 1 t.

      Hi Nadine! Yes it is 1 tablespoon plus 1 teaspoon cinnamon. I moved the ingredients to be side by side so it is less confusing. If you like cloves you can substitute 1 tea ground cloves for the additional 1 tea cinnamon:-)
