Earl Grey Tea Cookies (with fresh orange glaze)

Earl Grey Tea Cookies


2 3/4 cups all-purpose flour 2 tablespoons fine Earl Grey tea leaves 1/2 teaspoon baking powder 1/4 teaspoon kosher salt 1 cup (2 sticks) unsalted butter, at room temperature 3/4 cup granulated sugar 1 teaspoon vanilla bean paste (vanilla extract can be used) 1 large egg 2 tablespoons grated orange zest (divided) 1 cup powdered sugar fresh orange juice


In a large bowl, whisk together the flour, tea leaves, baking powder and salt.   photo 1-4   photo 2-2 In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with the sugar; beat on medium speed until light and fluffy. Reduce speed to low; add  vanilla bean paste, egg and orange zest.We love the color of this by the way, lovely.   photo 3-2 Mix to combine. Add the flour mixture and again, mix to combine.   photo 4-1 Form into a short log and cut in half. You will be forming 2 logs to slice and bake.   photo 1-5 Transfer the mixture to a flat surface covered with a piece of waxed paper or plastic wrap. Place at one end and roll into about a 2 inch diameter. Roll up into the waxed paper and twist the ends to close. Chill for at least 3 hours. This is where you freeze one and bake later if you want. And yes, you can slice it frozen and bake so it is SO easy to have one role in the freezer for when that unexpected company shows up!   photo 3-3 photo 4-2 Pre-heat oven to 350 degrees F. Line baking sheets with parchment paper. Slice the cookies 1/8 inch think and place on the prepared baking sheet, spacing them about 1 inches apart.   photo 2 Bake, rotating the sheets halfway through, until the cookies are lightly golden brown around the edges. About 14 to 16 minutes. Let cool. These are great just the way they are or you can add a light fresh orange glaze (like we did)   photo 3

Orange glaze:

1 cup powdered sugar 1 tablespoon fresh squeezed orange juice, or as needed 1 tablespoon grated orange zest Whisk sugar with orange zest and orange juice in a small bowl until smooth.   photo 4
