Yesterday was election day and I have to admit I was a bit anxious. By now you all know what I do when I’m anxious, I bake. And since it was early morn and actually still pitch dark out side, I settled on a morning baked good. Scones. I love scones. They are easy to whip up and fantastic warm with a hot cup of coffee. Gathering my ingredients I discovered one tiny problem…..NO all purpose flour (say what? in my kitchen?!) and since I was still in my pj’s, I was not about to get dressed just to go buy flour. Looking through the cupboard I discovered I had Bob’s Red Mill Gluten Free Flour…Ok then, I was back in business. Obviously my basic scone recipe can be adapted to a gluten free wonderful kind of scone. I did it and they were yummy. If you want the standard scone, use all-purpose flour instead of the gluten free and leave out the xanthan gum. This is a basic recipe where add ins are encouraged. I love roasted almonds, just sadly didn’t have any this time. I also love the combo of dried cherries and white chocolate, chopped candied ginger and toasted pecans……anyway, you get the picture. Be creative and add what you love – you won’t be sorry :-)

Scones

1 egg
1/2 cup cold buttermilk
1/4 cup sour cream
1 teaspoon vanilla extract
1 2/3 cups gluten free flour (I used Bob’s Red Mill all-purpose gluten free)
1 1/3 cups old-fashioned oats (Trader Joes are gluten free)
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon soda
1 teaspoon xanthan gum
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
10 tablespoons cold chopped butter
1 cup dried cherries

Instructions

Ingredients

Preheat oven to 400 degrees F. Line a baking sheet with parchment paper. Set aside

Whisk together egg, buttermilk, vanilla extract and sour cream. Set aside.

In a large bowl, whisk together flour, oats, sugar, xanthan gum, baking powder, baking soda, salt, cinnamon and ground ginger. Mix in dried cherries.

Add the chopped butter to to flour mixture and with clean hands mix until butter is incorporated and pebbly.

Pour the buttermilk mixture over the flour mixture and stir with a fork until the dough comes together. The dough will be wet and sticky.

Ready to mix

The dough can now be turned out onto a floured work surface, shaped into a round and cut into shapes. Or with floured hands, gather enough dough to pat out into desired shape.

Sprinkle with cinnamon/sugar mixture before baking.

Place on the lined baking sheet and bake for 20 minutes or until the tops are golden and firm.
