Cosmos Creations Caramel Apple Granola Bars

You won't be sorry. They have all kinds of crazy flavors, ALL outrageous. Anyway, here is one new creation with one more to follow (eventually!!) So....these are sticky and crunchy and nutty and just damn good, especially if you like caramel apple corn and sweet sweet granola bars. Easy to make, always a bonus. After cutting the bars we individually wrapped each bar with wrap for an easy grab and go sort of thing. They freeze well too. FullSizeRender-10  

Cosmos Caramel Apple Granola Bars

 

Ingredients

1/2 cup unsweetened shredded coconut 3/4 cup almonds, chopped 8 cups Cosmos Caramel Apple puffed corn, or any caramel apple popped corn 2 cups rolled oats, toasted - not instant and we used gluten free oats but regular work obviously just as well. 1/2 cup golden raisins 1/2 cup thinly sliced dried apples 3/4 cup honey 1 teaspoon vanilla 3/4 cup packed light brown sugar 1/4 teaspoon salt FullSizeRender-8  

Directions

Preheat oven to 350 degrees F. Spread coconut on an ungreased baking sheet and bake until lightly toasted, stirring once or twice, about 5 minutes. Coconut browns very quickly once it hits the right temperature so be diligent. Transfer to a bowl to cool. Next, spread the oats on the same sheet and toast in oven until golden brown, stirring and shaking a couple of times. Add to the bowl with the coconut. Now, toast your almonds using the same method and add to the coconut/oats bowl. Mist a 9-by-13-inch baking dish with cooking spray (we used a cookie sheet). In a large bowl, combine popcorn, oats, coconut, almonds, raisins and chopped apples; stir well. In a small pan over low heat, combine honey, brown sugar, vanilla and salt. Cook, stirring, until sugar dissolves, about 5 minutes. Pour honey mixture over popcorn mixture; stir until all ingredients are well-coated and there are no dry spots. Transfer mixture to baking dish. Using lightly moistened hands  and press firmly into baking sheet. Refrigerate for at least 30 minutes before cutting into bars. IMG_4049
