Chocolate Peppermint Whoopie Pies

The December Daring Bakers' Challenge had us all cheering - the lovely and talented Bourbonnatrix of Bourbonnatrix Bakes was our hostess and challenged us to make fun, delicious and creative whoopie pies! Delicious little cake-like cookies sandwiching luscious filling in any flavors we chose... What else is there to say but "Whoopie!" Though Susie has previously made whoopie pies (check out her 4th of July whoopie pie recipe!), this was my first time making them. Since it's winter, I thought chocolate peppermint would be the perfect flavor for the season!  

Chocolate Peppermint Whoopie Pies

Ingredients (pies):

  • 1 3/4 cup flour
  • 3/4 cup cocoa powder
  • 2 teaspoons baking soda
  • 1/2 cup (8 tablespoons) butter
  • 3/4 cup packed dark brown sugar
  • 1 cup half & half
  • 1 egg
  • 1 tablespoon vanilla
  • pinch of salt


  • Preheat oven to 375 degrees. Prepare baking sheets with parchment paper (foil might work, but these are quite sticky, so parchment paper is preferable)
  • Mix together butter, brown sugar, salt, and vanilla in stand mixer on medium-high speed until it looks lighter and fluffier. This should be about 2-3 minutes.
  • Add the rest of the ingredients and mix thoroughly. This should take about a minute or two, and the mixture should look fluffy still.
  • Scoop tablespoons of batter onto the prepared baking sheets (I used a cookie scoop and it worked well). Only put about 6 tablespoons on a cookie sheet because these will spread!
  • Bake for 10 minutes. Cool slightly before removing from pan.
  • Transfer to cookie racks and cool completely before filling. You can use any filling you want, but the one I used is below!

Peppermint Cream Filling

Ingredients (filling):

  • 1 stick butter
  • 2 cups marshmallow cream
  • 2 cups powdered sugar
  • 2 tablespoons half & half
  • 1 teaspoon vanilla
  • 1-3 teaspoons peppermint (depending on how peppermint-y you want your filling)
  • 3 drops red food coloring (optional)
  • Sprinkles (optional)


  • Mix all ingredients together in stand mixer. Start slow (you don't want powdered sugar everywhere!), then increase to medium-high speed. If the consistency isn't what you want, add more powdered sugar for thicker frosting and more half & half for thinner frosting.
  • Fill whoopie pies, roll in sprinkles
