Chocolate Peanut Butter Mini Babka

I recently discovered babka. If you don't know, babka is usually a load of bread that's been rolled or twisted and involves and chocolate or cinnamon filling. It's amazing and delicious. This week, we're bringing you mini-babka! They're a little more manageable than a full babka, but still just as delicious! For these, I decided to add a few peanut butter cups in order to make a chocolate peanut butter babka, and I think they turned out great!  

Chocolate Peanut Butter Mini Babka

Dough Ingredients:

  • 1 tablespoon instant yeast
  • 1/2 cup heavy cream or milk
  • 1/2 cup sugar
  • 2 cups flour (+ about 1/2 cup more if your dough needs it)
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1/3 cup butter, softened

Filling Ingredients:

  • 1/4 cup dark chocolate (or semi-sweet) chocolate chips
  • 8 full-size Reese's Peanut Butter Cups
  • 1/3 cup butter, softened

Egg Wash Ingredients:


Streusel Ingredients (Optional):

  • 2 tablespoons (25 grams) sugar
  • 3 tablespoons (25 grams) flour
  • 2 tablespoons (25 grams) butter, cold
  • Dash of salt




  • Mix all dough ingredients together, except butter, in stand mixer with dough hook. Stir until combined. Add butter and mix with dough hook until fully incorporated. Leave the mixer on for another 5 minutes.
  • Put the dough in a greased bowl and cover with plastic wrap or a damp towel. Leave for 1-2 hours, until doubled.
  • Near the end of the dough's rising time, you can begin to make the filling. To make the filling, combine the chocolate chips and Reese's Peanut Butter Cups in a food processor and mix until everything is broken up into small pieces. If you don't have a food processor, chop finely. Combine with butter when the dough is ready (see next step).
  • When the dough has risen, transfer it to a well-floured surface and roll it out into a very large rectangle, about 12 inches by 20 inches. Combine chocolate chip/peanut butter cup mixture with butter, and spread evenly over rolled-out dough.
  • Roll up the dough (so you have a 12 inch roll), and cut into 12 equal pieces (this will be gooey and messy - don't worry about it! They'll taste and look great once they've been baked).
  • Spray a muffin tin with non-stick spray (or butter it) and place one piece of babka in each well. Cover with a damp towel and let rise for one more hour.
  • Near the end of the second rising time, preheat the oven to 350 degrees.
  • Make the egg wash by combining egg and milk with a fork. Spread egg wash over babka just before baking. Sprinkle with Swedish Pearl Sugar, if desired. Alternatively, you could sprinkle the babka with streusel. To make the streusel, combine all ingredients (making sure the butter is cold!), until you have a lumpy mixture. Sprinkle on babka.
  • Bake babka for 25-30 minutes. Wait 5-10 minutes before serving.
