Caramel Popcorn Cookies

This is one fun cookie! This is a party cookie. Seriously, caramel and popcorn? So fun, so good. This is an easy basic cookie dough recipe with the additions of the fun stuff (caramel and popcorn). Make these, you won’t be sorry. And then have a party :-)

Caramel Popcorn Cookies

 

Ingredient:

 

1 1/4 cups granulated sugar

1/2 cup brown sugar

1/2 cup unsalted butter

1 teaspoon vanilla

1 large egg

1 3/4 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1/3 cup chopped caramels

1 mini bag plain microwave popped popcorn

 

Directions:

 

Preheat oven to 350 degrees F.

Combine sugar, brown sugar, softened unsalted butter and the vanilla in bowl of mixer. Beat at medium speed until fluffy. Add egg to mixture; beat just until blended.

Beat in flour, baking soda and salt.

Stir in caramel pieces and prepared popcorn (should be about 3 cups popped).

Drop dough by tablespoonfuls 2 inches apart on parchment paper-lined baking sheets.

Bake 10 to 12 minutes or until lightly browned.
