Buttery French TV Snacks

Here we go – Buttery Fancy TV Snacks!!  The key word is fancy. Not that these are all that fancy but just the same, the name of these has “fancy” in it. You just gotta try anything French with fancy in it. You just do. OK, these also happen to be simple to make and tastes great. So go ahead, try them.

 

Buttery French TV Snacks

Ingredients:

 

3/4 cup blanched almonds or hazelnuts, lightly toasted and cooled to room temperature

1/2 cup sugar

1/2 teaspoon kosher or flaky sea salt (if using fine or table salt, use 3/8 tsp)

1 cup all-purpose flour

7 tablespoons cold unsalted butter, cut into pieces.

 

Directions:

 

Preheat oven to 325 degrees F. Line 2 cookie sheets with parchment paper.

 

In a food processor, grind nuts, sugar and salt to a fine meal. In a mixer, beat flour and butter together on low speed until texture is sandy. Add nut mixture and mix on low until dough starts to form small lumps; keep mixing until dough just holds together when pinched between fingers. Don’t use wet fingers: the cookies will collapse!

 

Pinch off about a teaspoon of dough and place in palm of your hand. With tips of fingers, pinch and press dough together until cookie has a flat bottom and pointed top, like a rough pyramid. Cookies need not be perfectly smooth or equal size. Place on parchment about 1 inch apart.

 

Bake about 15 minutes, rotating cookie sheets halfway through. Cookies should be turning golden brown on edges. Cool on sheets 5 minutes, then transfer to wire racks and cool completely before storing in airtight containers up to 1 week (or freeze!).

 

**** Here is a trick we use – skip the toasting, cooling and grinding of the nuts and buy a mix of ground almonds and hazelnut flours. Or any combo or just one. These flours work just as well, and the flavor is just as good. In our opinion that is :-) OK, we agree, there is something to toasting nuts however, there is also something about convenience (and being lazy:-).

  9. FYI “The Crying Game” was a really good, (IMHO), psycho-thriller, released in 1992. When the ultimate twist played itself out, I was totally shocked as it was so totally unexpected.It’s a really cool flick, worth watching.

  12. That was hilarious, though, wasn’t it! The face the poor guy made when he heard what his name was *supposed* to be had my partner and I rolling around on the floor.The poor bloke, if they don’t give him the IT job he was interviewing for, they are heartless. At least he can say in his interview that he has initiative and problem solving ability!!
