Blueberry Vanilla Cocktail

Last week, when Susie and I made Cheesecake Blueberry Cookies, it wasn't the only thing we made - we also made a Blueberry Vanilla Cocktail! This cocktail is super simple and super delicious! Make it!  

Blueberry Vanilla Cocktail

  • 3 ounces blueberry vanilla simple syrup
    • 1 cup water
    • 1/2 cup fresh (or frozen) blueberries
    • 1 cup sugar
    • 1 teaspoon vanilla
  • 1.5 ounces vodka (or water if you want it to be a mocktail)
  • Prosecco (or seltzer water if mocktail)
  • Blueberries/pomegranate seeds (to garnish)

  • Make simple syrup first. To do this, combine water, blueberries, vanilla, and sugar in a small saucepan over medium heat. Stir regularly (at least every 30 seconds), watching it the whole time. Continue until the sugar is completely melted and no longer visible. Remove from heat and strain blueberries out, so you're left with the blueberry vanilla simple syrup. Set aside to cool, or put in refrigerator.

  • Once syrup is cool, combine 3 ounces of the syrup with 1.5 ounce of vodka in a martini glass (or whatever glass you have). Fill to the top with prosecco. Garnish with blueberries and/or pomegranate seeds.
  • Enjoy and a great cocktail (or mocktail)!
  • NOTE: this recipe makes quite a lot of simple syrup, so you can either have a lot of these cocktails or put the syrup to use in something else. If you find another delicious use for it, let us know!
