Basic Bran Muffin

    photo 2 OK, here is a basic bran muffin mix that takes only minutes to put together. It is tasty, freezes well and loves to have things added to it.....like chocolate chips, yes chocolate chips. I will add chocolate to almost anything, yes anything,  including a healthy bran muffin. I have to admit that I also love a good bran muffin with lots of nuts and lots of raisins. It is just a good combo. True story.

Basic Bran Muffins


  • 1/2 cup wheat bran
  • 6 tablespoons boiling water
  • 1/2 cup milk (or milk substitute of choice)
  • 1/2 cup honey
  • 2 tablespoons molasses
  • 1 teaspoons vanilla
  • 6 tablespoons vegetable oil
  • 2 eggs
  • 3 cups all-purpose flout
  • 3 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
Optional ingredients: Nuts, raisins, dried fruit, crushed pineapple, grated fresh carrots or zucchini, toasted coconut, sunflower seeds, etc.


  1. Heat oven to 400°F. Spray with cooking spray 12 regular-size muffin cups or 6 large muffin cups, or use muffin papers (but I'd still spray them!)
  2. In small bowl, mix wheat bran and boiling water. In medium bowl, beat milk, vanilla, honey, molasses, oil and egg with spoon until well mixed. Stir in bran mixture, flour, baking powder, cinnamon and salt just until flour is moistened. Fold in any added optional ingredients. Remember - the less you mix the more tender your muffin will be, just so you know. Divide batter evenly among muffin cups. Sprinkle with granulated sugar-cinnamon mixture.
  3. Bake 15 to 20 minutes or until golden brown and tops spring back when touched lightly in center. Immediately remove from pan to cooling rack.
