Baked Lemon Donuts

Donuts, donuts, donuts!! We love donuts, we really do. And these have got to be healthy cause we used fresh lemons, right? Yes. These are good, they have a very nice firm crumb so are perfect for dunking in your coffee or tea. We also have a vegan version of this particular donut that we’ll post later and it’s just as good. At least we think so. For a twist, try using fresh limes instead of fresh lemons cause how good is a lime donut? Way good. Trust us. At any rate, start here >>>>

Baked Lemon Donuts

Ingredients

1 cup all-purpose flour
1 tea baking powder
1/4 tea baking soda

3/4 cup granulated sugar
zest of 3 large lemons
1 egg, beaten
4 tablespoons butter, softened
1/2 cup sour cream
1/4 cup whole milk
1/4 tea vanilla extract
1/8 lemon extract

Lemon Glaze

2 cups powdered sugar
1/4 cup hot milk
1 1/2 tablespoon fresh lemon juice

Directions

Preheat oven to 350 degrees F and generously grease (or spray) your donut pan, set aside.

In a large bowl whisk together baking powder, baking soda, sugar and lemon zest.

In a mixer with paddle attachment mix together sugar, zest, egg, butter, sour cream, milk and vanilla and lemon extract. Mix until smooth. There will be pieces of butter, no worries.

Make a well in the middle of dry ingredients, add wet ingredients to the center of the well and stir just until combined. Over mixing will make a tougher crumb.

Either pipe or spoon into your donut pan to about 2/3 full.

Bake about 10 minutes or until donuts spring back when touched.

Let cool in pan for about 5 minutes.

Prepare lemon glaze by combining all lemon glaze ingredients.

Drizzle glaze over completely cooled donuts and let sit for awhile (good luck with that) until the glaze has hardened.
