Back To School No Bake Peanut Butter Oat Bars

  Here is the best thing about these: there are only three (that's right - 3!!) basic ingredients!! These are super easy, only take a few minutes to put together and are great in those back to school lunches...well, that and fulfilling those peanut butter-chocolate chip cravings you might be having. Like when do you not have those? Anyway, feel free to add any additional ingredients like sunflower seeds, flax, roasted chopped nuts, etc.....


1 cup peanut butter 1 cup honey 3 cups oats mini chocolate chips (as many or as few as you like) Directions:

photo 1-3 photo 2-1 Melt peanut butter and honey in large pan on medium heat. Add oats,  stir well then add your mini- chocolate chips.   photo 3-1 Press into a 9 x9 inch square pan. Cover and let harden overnight. Cut into appropriate size bars and wrap individually with plastic wrap. I refrigerate at this point, I like them a bit stiffer and I like them cold. Plus, if you are packing in a lunch cooling them first will bring them to room temp by the time they are eaten and that is just.....good.   photo 4
