Apricot-Toasted Nut Granola

We know – Granola. It sounds so boring. Like how many granola recipes are out there? Tons is the correct answer and seriously, aren’t they really just about all the same?….We get it, granola is granola. Except when it isn’t. This isn’t the normal granola. The nuts are toasted first, lots of dried apricots, plump big raisons, honey and cardamom. It’s the cardamom that throws in the kick and makes you ask “what’s in this?” That’s a good thing. Make this one, eat it soaked in almond milk, coconut milk, regular milk, whatever milk and then enjoy! Oh and also, it’s good soaked in warm milk too. Whoa….

Apricot-Toasted Nut Granola

 

Ingredients:

 

3 cups rolled oats (not quick-cooking)

1 cup unsalted toasted nuts (we used almonds and pecans)

1/4 cup unsalted butter, cut into pieces

 

1/2 cup honey

1 teaspoon vanilla extract

1 teaspoon ground cardamom

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup dried apricots, diced medium

1/2 cup raisons (we used jumbo raisons)

Directions:

 

Preheat oven to 300 degrees F. In a large bowl, combine oats and nuts.

In a small saucepan, combine butter, honey, vanilla, cardamom, cinnamon, and salt over medium heat. Cook, stirring occasionally, until butter melts, about 2 minutes.

Pour butter mixture over oat mixture and toss until oats and nuts are completely coated.

Transfer to a parchment-line rimmed baking sheet and spread in an even layer.

Bake until oats are lightly golden, 35 to 45 minutes, stirring every 10 minute.

Let cool completely on sheet on a wire rack, 20 minutes, then stir in apricots and raisons.

Store in airtight containers up to 2 weeks.
