Another Daring Bakers’ Challenge – Crackers and Crisp Flatbread!

Hello all! I'm back. I haven't been able to bake anything for a while because I had finals (I know, terrible. In February, no less.) And then the Academy Awards. For those of you who don't know, the Academy Awards are kind of a big deal in our family. As in, it's Susie's favorite holiday by a long shot. We all fill out ballots, but instead of winning money or a prize, we win a miniature figurine named Oscar. Unfortunately, I've lost TWO years in a row by HALF A POINT. It's devastating. Clearly, I'm still recovering. Perhaps next year I should see more than one of the nominated movies.   Anyways, now that those two events are over, I'm back to the kitchen. Since it's almost the end of the month, I thought I'd do the Daring Bakers' Challenge!   Sarah from All Our Fingers in the Pie was our February 2013 Daring Bakers’ host and she challenges us to use our creativity in making our own Crisp Flatbreads and Crackers! 🙂   For this challenge, I decided to make two types of crackers - one regular and one gluten free. They're really different but I think they both turned out really well. I hope you enjoy the recipes!

Homemade Curry Crackers

Adapted from Food.com

  • 1 cup flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 teaspoon curry powder
  • 1/3 cup water

  • Pre-heat oven to 350 degrees, prepare pan with parchment paper
  • Mix all dry ingredients together, then add water
  • Roll the dough out to at least 1/8 of an inch (can be thinner)
  • Cut into desired cracker shape (mine were just squares)
  • Place crackers on prepared pan and sprinkle with salt (optional)
  • Bake for 10-14 minutes (check the last few minutes, you don't want them to burn!)

Gluten Free Crackers

Adapted from Oh She Glows

  • 1/2 cup brown rice flour
  • 3/4 cup hazelnut flour
  • 2 tablespoons poppy seeds
  • 2 tablespoons flaxseed
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 tablespoon dried parsley
  • 1.5 tablespoons Trader Joe's Dukkah (optional but delicious!)
  • 1 teaspoon olive oil
  • 1/4-1/2 cup water

  • Pre-heat oven to 350 degrees and prepare pan with parchment paper
  • Mix together all dry ingredients
  • Add in water and olive oil, and mix with hands to combine. Start with 1/4 cup of water and add more as necessary. The dough should combine, but not be too dry.
  • Roll out dough to at least 1/8 inch thick (but it can be thinner)
  • Cut crackers into desired shape
  • Bake for about 15 minutes. Check often near the end, as you don't want them to burn. It may take as little as 13 minutes, or as many as 18.
