Alice’s Vegan Omega 3 Lovin’ Cookies

  IMG_4894 We have a guest baker!! Our sweet Alice is in the kitchen making some outrageous healthy, yes we said healthy, cookies!! Alice also happens to be my beautiful daughter-in-law and Rebekkah's sister-in-law and how lucky are we ..... she bakes! And she bakes healthy no less so take a look at her wonderful recipe and make these cookies! Of course if I was you I would totally add chocolate chips because let's face it, everything is just a bit healthier when you throw in some chocolate. I'm sure Alice would agree 🙂  

Alice's Vegan Omega 3 Lovin' Cookies

 

Ingredients:

  2 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 3 tablespoons flax meal 2/3 cup granulated sugar 2/3 cup brown sugar 2 teaspoons vanilla 2 tablespoons chia seeds + 6 tablespoons water 1 cup earth balance (you can microwave for about 30 seconds to soften) 1 cup old fashioned oats 1 cup dried cherries, loosely chopped 1 1/2 cup chopped walnuts, toasted

Soak the 2 tablespoons of  chia seeds in 6 tablespoons of water. You are going to set this mixture aside for 15 minutes, stirring at the half way point. This works as the egg substitute. IMG_4852 In a large bowl whisk the flour, soda, salt and flax meal. IMG_4863 IMG_4865 In a medium bowl mix together Earth Balance with the granulated sugar and the brown sugar until well blended. Stir in vanilla, mix until smooth. Add chia (after it has soaked for the 15 minutes) and stir until blended. IMG_4880 IMG_4881 Add sugar mixture to dry ingredients along with the oats, dried cherries and toasted walnuts. Mix well. Place mixture into your fridge for about 15 minutes. Preheat your oven while your cookies are in the fridge. Line baking sheets with parchment paper. IMG_4884 Scoop cookies into 2 inch balls and bake for about 15 minutes. Keep an eye on them. IMG_4894 *** Possible add-ins: chocolate chips, nibs, sunflower seeds, raisins, currents, any dried fruit, and nut (toasted or not), a sprinkle of wheat germ, a splash of honey and where ever your imagination takes you......
